GF Turkey Noodle Soup


A few weeks ago, I roasted a 5lb turkey breast.  There was a great deal of meat leftover which I threw in the freezer.  I also  saved the carcass to make turkey soup.  The homemade broth gives it full rich turkey flavor.  This recipe took 4 hours, but most of that was simmering time.  This is an ideal dish when you have lots to do around the house.  This recipe makes 10-12 servings which makes it perfect as a make ahead week's worth of lunches.  

To start, I rough chopped carrots, celery and onion.  I added them to a pot of water along with the turkey carcass and a bayleaf.  I set the pot over low heat and simmered for 2-3 hours.  The longer, the better.

I removed the carcass and strained the broth into a large bowl removing the vegetables and bay leaf. Returning the pot to the stove, U turned the heat up to medium.  Melted butter and sautéd onion and celery for 2-3 minutes.  I added carrots and thyme to the pot and cooked another 5-6 minutes, stirring occasionally.

Next, I returned the broth to the pot and added the leftover turkey.  I turned the heat back down to low and covered the pot to allow it to simmer for another 30 minutes.  20 minutes before serving, U added a package if GF Fusilli noodles.  


 GF Turkey Noodle Soup:

Ingredients:

2 tbsp butte
8 cups turkey broth (recipe below)
1 med onion, diced
2 ribs celery, chopped 
2 carrots, peeled & cut into small coins
1 tsp thyme
2 cups turkey, cubed
1 (12oz) pkg GF pasta

Directions: 

In a pot, melt butter and sauté onion and celery for 2-3 minutes over medium heat.  Add carrots and thyme to the pot and cook another 5-6 minutes, stirring occasionally.  Next, add the turkey broth to the pot along with the cubed turkey.  Turn the heat down to low and cover the pot to allow it to simmer for at least 30 minutes.  After the 30 minutes, add the GF pasta, recover the pot and allow to simmer for 20 more minutes.  Enjoy!

Homemade Turkey Broth:

Ingredients:
8 cups water
Turkey carcass
1 bay leaf
2 carrots, rough chopped
2 ribs celery, rough chopped
1 lg onion, peeled & quartered
 
Directions:

Throw all ingredients in a stock pot and cover. Simmer on low for 2-3 hours. Discard the carcass and strain out the bay leaf and vegetables before using the broth.
