Family Friendly Meal: Baked Potato Bar


Friday night is usually family movie night around here.  Last night we watched Cloudy with a Chance of Meatballs 2!  I thought it would be great to have our own fun with food so I chose to have a baked potato bar. I don't think there is an easier dinner that makes everyone happy than a baked potato bar! The boys had fun coming up with their own creations that were both healthy and filling!  

Our topping choices last night were:
*steamed broccoli 
*sautéed baby Bella mushrooms
*diced ham
*diced chicken
*sliced pepperoni 
*diced bacon
*pizza sauce
*cheddar cheese
*Colby cheese
*sour cream
*sliced scallions
*salt & pepper to taste
  


Baked Potato Bar:
1 baking potato per person
Olive oil
Kosher salt
Toppings of your choice

Preheat oven to 400*F.  Wash potatoes well and pat dry.  Pierce each potato several times with a fork. One at a time, lay a potato on a large foil square.  Drizzle some olive oil over the potato and rub it over the entire skin.  Sprinkle a little kosher salt on the potato and then wrap up in the foil and place it on a baking sheet.  Place the filled baking sheet into the hot oven and bake for 75 minutes.  Remove the baked potatoes from the oven and let cool for 10 minutes before adding the toppings of your choice.  Turn your oven up to broil.  After adding your toppings, place the potatoes under the broiler for 1-2 minutes to melt cheese and meld the flavors together.  Garnish with scallions and sour cream if desired and enjoy!
